Pumpkin Pies

I forgot to mention that when we were carving pumpkins the other night, Mia asked if we ever used the pumpkin to make something. As in something edible. I told that I've cooked the pumpkin seeds but never the actual pumpkin. The Polack and I aren't big fans of pumpkin flavored food. Plus why go to the trouble when you can get pumpkin already prepared in handy dandy cans?

Of course her sense of adventure is much grander than ours. She found a recipe for pumpkin pie and decided then and there that she was going to make some. Did you know that you're supposed to boil the pumpkin - like potatoes - as you prepare it? I didn't so I learned something new!
Her pies turned out really well. I was very impressed with her baking skills. Of course this is coming from someone who doesn't even own a rolling pin so it doesn't take much to impress me!
